With Christmas coming soon, let us help you take the stress out of cooking and make it nearly as enjoyable as eating the finished product. With our vegetarian christmas cooking workshop you will learn to turn your dinner into a nourishing and nutritious plant based feast or new side dishes ideas and to enjoy while doing it. Is all about fresh seasonal flavours,quality produce, textures and that wow factor with every bite.
Chef Diogo Manzoni (@d_manzoni) who has over 12 years of experience working in Fine dining restaurants, including French based cuisine Restaurant Tribeca located in the Netherlands with 2 Michelin stars, where Nature determines what is on their menu. He explored his passion for cooking since he was young, seeing his grandmother in the kitchen and his father whose secret ingredient was love. He will give you all the tips and tricks to make the big day as seamless as possible.
Workshop details:
This workshop is hands-on, you will have the opportunity to create and enjoy demonstrations of a variety of dishes, before sitting down to enjoy them with a glass of wine or cava from the region. Our Chefs Diogo Manzoni and Faviana Uribe will guide you all day through the creation of your culinary masterpieces.

Per day: full workshop with lunch and dinner and wine pairing

Day 1:
10 am arrival welcome with a glass of cava and an apéritif.
10.30 start of workshop: vegetarian cooking with wine:
Three course Lunch Workshop:
- Apple celery soup
- Aubergine bruschettas, white bean pure and gremolata
- Sweet potato gnocchi stew
2 pm lunch
4 pm short walk in the forest collecting edible herbs and plants
5 pm start of dinner workshop:
Three course dinner Workshop:
Starter: Beet tartar, pickled mustard seed, apple / orange mustard vinaigrette
- Main: Pumpkin risotto, antiboise, turmeric tuile
- Dessert: Egg yolk coconut tart/ meringue/ lemongrass vinaigrette
9 pm dinner with local vegan organic wines from the penedes
Day 2 :
10 am arrival and welcome with a glass of cava
10.30 start of workshop
Three course Lunch Workshop:
- Whole roasted cauliflower, zaatar, apple
- Crostini, hummus beet, pickled carrots , orange
- Stuffed pumpkin sweet potato curry
2 pm lunch
4 pm wine tasting with local cheeses
5 pm start of dinner workshop
Three course dinner Workshop:
- Starter: Endive/ grapes/ goat cheese / quinoa/ caramelised walnuts
- Main: cauliflower steak/ wild mushrooms/ pine nut miscela
- Dessert: NY cheesecake / lemon mint curd/ pistachio
9 pm dinner with local vegan organic wines from the penedes
OPTIONS:
- 1 day workshop : preparing lunch and dinner
- 2 days of workshop : preparing lunch and dinner on both days
- 2 days of workshop with overnight stay
